Introducing the World’s First CO₂-Washed Malt New Make Spirit

At Funny Distillery, innovation isn’t just a buzzword — it’s the essence of everything we do. As Taiwan’s pioneering creative spirits brand, we thrive on reimagining traditions and pushing the boundaries of flavour. We do not hack only raw materials but also the production methods.

Our latest creation is a testament to that philosophy: the world’s first CO₂-Washed Malt New Make Spirit.

What is it?

This 63% ABV new make is born from the heart of malt whisky production — the heart cut — and then taken to a whole new sensory level. Imagine the delicate aromas produced during fermentation: fresh white blossoms, tropical fruits, and bright citrus. Normally, these volatile compounds escape along with the CO₂ generated during fermentation. But what if you could bring them back?


The Innovation

During wort fermentation, CO₂ naturally carries away layers of beautiful aroma — think white flowers, grainy, tropical fruit, pineapple, and lime. We decided not to let them drift away. Instead, we dedicated one fermenter purely to capturing this aroma-rich CO₂. Then, using our modified Lomond still, we distilled our heart part of spirit and “washed” it with this CO₂. This process dissolves those elusive aroma molecules back into the spirit, elevating its aroma intensity to next level.

The result is unlike any traditional new make. It’s as if you’ve just bitten into warm wholegrain toast, surrounded by fresh white blooms, while a wave of tropical citrus brightness dances through the air.

Why it Matters

In the global craft whisky scene, releasing a “new make” spirit is a common way for young distilleries to share their signature style before their whisky mature. But we wanted to go beyond simply offering a preview — we wanted to make something that would spark conversation, challenge perceptions, and allow drinkers to vividly imagine the future of our whisky.

Think of it like this: after eating a ripe mango, you blow bubbles into a glass of water for more than hours— and that water bursts with mango aroma. That’s essentially what we’ve done, but with malt new make spirit and CO₂ washing.
